The unique honey process used here reflects both tradition and innovation: after careful harvesting, the coffee cherries are pulped but allowed to dry with part of the fruit’s mucilage remaining. This process demands skill, patience, and constant attention, allowing the beans to develop a distinctive sweetness and layered complexity.
