At 1600-1800 meters above sea level, nestled in the highlands of El Palomar, Peru, lies Chacra D Dago, a small family-run farm committed to producing exceptional coffee in harmony with nature. Led by Dago and his family, the farm embodies generations of passion, deep agricultural knowledge, and respect for the land.

The unique honey process used here reflects both tradition and innovation: after careful harvesting, the coffee cherries are pulped but allowed to dry with part of the fruit’s mucilage remaining. This process demands skill, patience, and constant attention, allowing the beans to develop a distinctive sweetness and layered complexity.
